First Lady and Sam Kass Talk Child Nutrition on Today

One of the advantages we enjoy here in Iowa is that we get to see our presidential candidates and their families up close and personal during our caucus process.  While I had seen then-Senator Obama give that stirring speech at the 2004 Democratic Convention, it was really a speech here in Iowa by his wife Michelle that made me a fan of his.  I figured if a lady this smart and classy married him he must be worth a look.

Many of us foodie-activist types were excited when Barack Obama was elected because we believed that maybe finally something could be accomplished for our agenda of “Good, Clean, and Fair” food for everyone.  Sure enough, that first spring there was the First Lady out there planting an organic garden on the White House grounds.  Say what you will about their former opponents, no one could imagine Cindy McCain doing anything even remotely similar.

So now a year has gone by and Mrs. Obama is launching a childhood obesity initiative the way such things get launched these days, on NBC’s Today Show.  It’s tradition for FLOTUS to have a cause such as this, and these causes are almost always worthwhile: literacy, homelessness, “Just Say ‘NO!’” etc.

Ms. Obama’s initiative is no exception.  The statistics are alarming – 1 in 3 American children born in 2000 or after will develop diabetes before they are old enough to vote.  Among minorities that ratio rises to 1 in 2.  There is no health system that can hope to cope with the implications of that no matter what her husband and Congress manage to accomplish.

Failure to Cultivate: A Response to Caitlin Flanagan on School Gardens

In the latest edition of The Atlantic magazine, Caitlin Flanagan has written a surprisingly harsh critique of the popular and growing movement to include gardens in our public schools. In a nutshell, she states that pursuing this activity over and above the three R’s will turn our children into illiterate sharecroppers. Right from the start, though, she gets it wrong.

She has the reader picture the son of undocumented migrant workers entering his first day at Martin Luther King Middle School in Berkeley, home of the well-known Edible Schoolyard project, “where he stoops under the hot sun and begins to pick lettuce.”  Her callous disrespect for labor only begins there, but the real problem with her argument lies in her stubborn refusal to accept that a good idea may have sprouted from an ideology other than her own.  She goes so far as to describe it as:

    …A vacuous if well-meaning ideology that is responsible for robbing an increasing number of American schoolchildren of hours they might other wise have spent reading important books or learning higher math (attaining the cultural achievements, in other words, that have lifted uncounted generations of human beings out of the desperate daily scrabble to wrest sustenance from dirt)

Ms. Flanagan has chosen to ignore the core purposes of these gardens, only one of which happens to be cultivating a respect for hard work, and only one other of which is a healthy respect for real food.  While she notes that the work of the garden has migrated into each of the classrooms, she ignores the obvious point that this demonstrates: There is nothing taught in schools that cannot be learned in a garden.  Math and science to be sure, but also history, civics, logic, art, literature, music, and the birds and the bees both literally and figuratively.  Beyond that though, in a garden a student learns responsibility, teamwork, citizenship, sustainability, and respect for nature, for others, and for themselves.

In 1946, when President Truman signed the School Lunch Act, he said, “In the long view, no nation is healthier than its children, or more prosperous than its farmers.” If that was a statement of purpose rather than merely a rhetorical flourish, then the School Lunch Act has failed.

Today in America we have steadily rising rates of childhood obesity, and if you were born after 2000, you have a startling one-in-three chance of developing early-onset diabetes. Meanwhile America now has more prisoners than farmers, and among those few remaining farmers the average age is 57.1 and rising. The equation becomes quite simple to understand: No farmers equals no food.

In an effort to raise awareness and rally support behind changes to the upcoming reauthorization of the Child Nutrition Act, Slow Food USA has created the Time for Lunch campaign. This campaign is calling on Congress to provide the resources schools need to serve real food for lunch. Those involved in making the day-to-day dietary decisions for our children do not have the adequate resources to provide healthy, nutritious, and yes, tasty food for our kids. This must change. It’s time to invest in children’s health, protect against food that puts children at risk and teach children healthy habits that will last through life.

Ruminations on the Obama Era
Even those of us in the hectic world of restaurants must occasionally take a break, and so it is that Inauguration Day found me in the High Desert north of Santa Fe, New Mexico. I took the train from my home in Iowa and am now enjoying the healing waters at Ojo Caliente and reflecting on the new world we’ve entered. Much has been said about the myriad ways this milepost in history marks profound change: in matters of state, matters of race, matters of politics and compassion; and rightly so. A new day is indeed dawning, and if you’ll pardon the mixed metaphor, joy cometh in the morning.

As a nation, though, there is an important aspect we still refuse to grapple with in its totality: food. Maybe because it is such an immense prospect to ponder — food is one of the very few things that we all share in common, and it touches nearly every aspect of our lives. We work in the daily grind each day, perhaps in part because of our love of the work (for the lucky among us anyway), but mostly in order to put food on our tables and nourish our families. Yet in our national discourse, the closest anyone gets to talking about food is either in considering the minutia of the farm bill or decrying the latest food-borne illness outbreak that is often brought about by that very minutia.

Colonel of Truth: How I Beat the KFC "Meal Deal Challenge"

Recently, the American public was issued a challenge by the folks at KFC (formerly "Kentucky Fried Chicken," but "fried" just didn't sound healthy). The fast-food joint argues in its latest commercial that you cannot "create a family meal for less than $10." Their example is the "seven-piece meal deal," which includes seven pieces of fried chicken, four biscuits, and a side dish -- in this case, mashed potatoes with gravy. This is meant to serve a family of four.

I'm not really a competitive soul, but this was one challenge I could not resist. When it comes to food, America has been sold a bill of goods. We've been flimflammed, bamboozled, hoodwinked. We've been tricked into thinking that cooking is a chore, like washing windows, to be avoided if at all possible, and then done only grudgingly and when absolutely necessary. On the contrary, cooking is a vital, spiritual act that should be performed with a certain reverence. After all, we are providing sustenance to the ones we love -- can anything be more important?

And don't get me started on advertising. It never ceases to amaze me that, with the exception of political ads, people don't focus on the falsehoods. Commercial advertising washes over people without the slightest analysis; we truly need a FactCheck.org for business advertising.

In the KFC commercial, a mother and two kids hit a grocery store for the necessary ingredients. When they fail to get them for under $10, Mom cheerfully announces, to the kids' delight, that they are going to KFC. In these hard economic times, Colonel Sanders wants you to think that giving him your money is the cheaper way to go. I respectfully disagree.

The Cost of Cheap Food (and a morel recipe)

As Earth Day approaches this year, it seems that people are thinking more about food’s price than its ecological footprint. A simple trip to the grocery store tells the same story we’ve been hearing on the news: it’s getting more and more expensive to feed ourselves.

I’ve been thinking a lot about food prices, too. After holding off for almost a year, I raised the prices at my restaurant. I was able to avoid it longer than some of my fellow restaurant owners, partly because I have relatively low overhead: a small space and a small staff. Also, we buy all our meat and dairy — and roughly 60 percent of everything else — from nearby sustainable farms and food artisans. By buying locally as much as possible, we staved off the effects of higher fuel costs on prices. But now our local suppliers have their own rising costs to contend with, so they pass their costs along to their customers (me), and I pass them along to mine (you). Round and round we go.

All this got me thinking about an essay I read a few years back by nutritionist Joan Dye Gussow called “The Incompatibility of Food and Capitalism” [PDF]. In a nutshell, she argued that while capitalism is a fine system for creating and distributing things like cars and computers, it isn’t well designed to handle the production and dispersal of food.

Marketers work their magic to make us need (or think we need) more and more TVs, computers, cars, and snowmobiles, but they can’t make us need more food. Even on the more-than-ample diet of the average American, we can still only eat about 1,500 pounds of food per year. The capitalist solution, Gussow said, was to put less food in our food, thus necessitating that we buy more of it. This leads to things like fruit juice cans on store shelves that proudly proclaim that they contain “10% real fruit juice!”
